Fun Pickled Pepper Trotters

Prepare the ingredients, chop the pig's trotter into pieces, remove the hair and wash it, add a few slices of ginger in a pot of cold water, and boil it for 5 minutes.

After removing it, wash the blood foam with hot water. Put the white vinegar, pepper, ginger slices and a few dried red peppers into the pressure cooker (you can keep it if you are afraid of spicy food)

Choice of ingredients: pig's trotters, choice of cooking method: stew, time setting: 40 minutes, pressure setting: 50, click start.

Make soup: Put pepper, star anise and bay leaves into the material box, add ginger slices, sugar, salt and the material box into the small pot, add 1.5 bowls of clear water, turn off the heat 5 minutes after heating, let cool and remove the material box.

Let the stewed pig's feet cool and add them to the seasoning soup. Pour the pickled peppers and pickled pepper water together. Let it stand for 2 hours to taste and you can eat it (store it in the refrigerator in summer).
Tips:
This pork trotter with pickled peppers is mainly spicy, but if you don’t like it too spicy, you can skip the red pepper. When braising, I can reduce the pressure appropriately. Dear friends, or shorten the time.
