Separate the egg whites and egg yolks, beat them up and set aside.

Put salt, ginger, red wine vinegar, sugar in a bowl, mix well and set aside.

Pour oil in the wok, add 1 salted egg yolk, and fry until sandy.

Put the egg yolk and start to stir fry.
5.
Fry the egg yolks until the shape is set, add the egg whites, stir and fry quickly.
6.
Pour the juice into the bowl.
7.
Stir evenly to turn off the heat.
8.
Not bad right!
Tips:
Because I don’t have white vinegar anymore, I used red wine vinegar. Old vinegar, balsamic vinegar, both are fine!
