Tips:
1. Prepare the raw materials. Because garlic is the main ingredient, it can not only remove the fishy smell, but also increase the fragrance. Don't be afraid of too much; I saw that there is not much fish in the container, so I have some enoki mushrooms as the bottom; of course You can also use other vegetables or not, remember that if they are not cooked, they should be blanched and cooked;
2. The garlic must be fried in oil until it is slightly browned, so that the garlic will be more fragrant; and frying the catfish with this garlic can help it to remove the fishy and freshness;
3. After processing the two main ingredients in advance, stir-fry the bean paste, tempeh and green onion ginger with the remaining oil, sauté fragrant, and then add the fried catfish segments; flip gently to prevent damage to the surface, then add Beer without raw materials; beer can effectively remove fishy and improve freshness, if not, add cooking wine and appropriate amount of water;
4. Cover and cook for six or seven minutes. Do not cook the fish for too long to keep the fish fresh and tender. At this time, add the stir-fried garlic and cook. Don't add the garlic too early to avoid overcooking. Add seasonings, turn on high heat to collect the sauce, until thick to the desired degree.
5. Pour the cooked fish meat in a pan with enoki mushrooms, and sprinkle some shallots on the surface.
