Cut off the old roots of enoki mushrooms, tear them into small flowers and wash them.

Bring water to a boil in a pot, and blanch the enoki mushrooms for about 1 minute.

The hot enoki mushrooms are rinsed with cold water, dried and set aside.

Mince garlic and cut dried chili into sections.

Pour an appropriate amount of vegetable oil into the pot, add minced garlic and stir fry to change the color.

Add dried chilies and stir fry to create a fragrant aroma.

Pour the enoki mushrooms and stir fry for a while.

Add soy sauce, oyster sauce and sugar, stir fry evenly.

Drizzle sesame oil before serving, and sprinkle with chopped green onion and coriander.
