Garlic Spinach Mixed with Walnuts
1.
Peel the walnuts and clean them, put them in the oven and bake at 155 degrees for 10 minutes, then take them out and let them cool.
2.
Slice garlic, add a little salt (up to 0.5g in addition to the weight) and mash it into garlic. Then mix in vinegar, soy sauce, salt, sugar and sesame oil and mix thoroughly as a sauce.
3.
Wash the spinach and cut it into inch sections. After soaking the fungus in advance, wash and remove the stalks and tear them into small flowers.
4.
Boil a pot of water, blanch the treated fungus for 1-2 minutes, then remove it and ice it with ice water, and control the water for later use.
5.
Add a little salt and a few drops of edible oil to the water for blanching the fungus. After boiling, add the spinach sections and blanch them for half a minute. Then remove the water and rinse and dry the water for later use.
6.
Take a large bowl, mix the fungus, spinach, walnuts, and juice.
Tips:
1. If the walnuts are not astringent to eat, it is best to boil the peeled walnuts to remove the amber skin on the surface, but this is a slightly time-consuming process, I am lazy to omit it.
2. Walnut kernels can be replaced with fried peanuts or fried white sesame seeds, which are equally delicious.
