Garlic White Meat

Wash the pork belly and cut into large pieces. Add the cooking wine, green onions, ginger, star anise, bay leaves, and cinnamon to a pot under cold water. Boil and skim the froth and turn to medium-low heat for about 15 minutes. Turn off the heat and simmer for 3 minutes. The chopsticks can be pierced in (too rotten will affect the taste).

Take out the cooked pork belly and soak it in cold water (ice water tastes better) for 10 minutes.

Kitchen paper towels absorb surface moisture and cut into thin slices for later use.

The cucumber is sliced into thin strips with a plane.

The cucumber slices are rolled up and ready to be plated.

Arrange the pork belly slices in order and place them on the plate.

Add 2 tablespoons of light soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sesame oil, 1 tablespoon of chili oil, 1 tablespoon of Chinese pepper oil, 1 tablespoon of balsamic vinegar, 1 tablespoon of sugar for freshness, 1 tablespoon of warm water, stir well, and make a sauce.

Peel and chop cooked peanuts, mince garlic, and a little chopped green onion.

Add chopped peanuts and minced garlic to the prepared sauce and mix well.
10.
The sauce is poured on the pork belly.
11.
Just sprinkle with chopped green onion.
