Ginger Candy

Wash the ginger and cut into thin slices

Soak the ginger slices in brine for half a day to remove the spiciness
3.
Add sugar, one pound of ginger puts at least 72% of sugar

Bring the ginger slices and the melted sugar to a boil over medium heat, simmer on a low heat until they are silky, then turn off the heat, and stir fry until the sand comes out.
Tips:
Try to stick the sugar on the ginger slices when stir-frying, otherwise the sugar will stick to the frying spoon after the sand is out
