Ginger Fudge

1. Prepare 200 grams of ginger, 45 grams of maltose, 6 grams of apple gum, 30 grams of brown sugar, and 120 grams of white sugar.

2. Juice old ginger.

3. Apple gum and brown sugar, mix well.

4. Oil the container for later use.

5. Add ginger juice to the pot and boil to 40-50 degrees.

6. Add brown sugar and apple gum, and stir quickly evenly.

7. Continue to heat to 80 degrees, add sugar and maltose, and mix well.

8. Simmer on low heat until it reaches about 110 degrees. The soup becomes thicker.

9. Pour into a container to cool.

10. Cool thoroughly, cut into pieces, and sprinkle with a layer of sugar.
