Glutinous Rice Pancakes with Fruits

Soak the glutinous rice for one night and make breakfast the next morning

Dice the sausage

Cut shiitake mushrooms into small cubes for later use

Mix the sausage and mushrooms with glutinous rice, add pepper, sesame oil, salt and light soy sauce, add water and steam into glutinous rice with a rice cooker. The amount of water is about the same as usual.

This is the steamed glutinous rice. It smells very fragrant. The glutinous rice is very soft because it has been soaked overnight.

Stir the glutinous rice evenly, the mushrooms are basically floating on the surface due to the weight, so mix it well

Mix the flour and oat fiber, add a little salt and water to make a paste, slightly thinner, and leave it without oat fiber. Add 2 eggs and mix well

Put a little oil in a non-stick pan on a low fire, put a spoonful of batter, shake the pan left and right to form a round cake, use low heat all the way, or the batter will solidify before you shake it into a circle.

Turn it over and fry again until it turns golden brown

Wash the coriander as a side dish. After the pancakes are fried, the glutinous rice is not so hot. All are served on the table.

Take a piece of cake, put glutinous rice, coriander, pickled cucumbers or other pickles you like, and eat the rolls.

The glutinous rice burrito canโt be used up, you can eat it as it is, and it tastes great if you eat it alone.
Tips:
Soak glutinous rice overnight, it will be very soft when steamed. You can put your favorite powders such as corn flour in the batter.
