Glutinous Rice Pumpkin Cake

Wash the glutinous rice and soak it in clean water overnight. I use more glutinous rice, and I can use half of it.

Take the glutinous rice out and drain it, put it on the sieve in the retort, put it in the inner pot, add a proper amount of water, and cover the glutinous rice slightly.

Put the inner pot and the retort into the Zhenmi Desugar Rice Cooker, start the steaming function, and steam for 22 minutes.

Take out the steamed glutinous rice. The process is very simple, just like ordinary steamed rice.

Add appropriate amount of xylitol to the glutinous rice, mix thoroughly, and set aside to let cool.

Then wash the pumpkin, remove the pumpkin seeds, cut into large pieces, and put it in the Zhenmi Desugar Rice Cooker. Select the steaming function and steam for 25 minutes. If you make a small amount, you can steam the pumpkin and glutinous rice together, which saves time.

Spread plastic wrap on the mold (or deep dish), spread a layer of glutinous rice on the bottom, and compact it.

Crush the steamed pumpkin meat with a spoon into pumpkin puree, and alternately spread the pumpkin puree and glutinous rice in it and flatten it.

Until the entire mold is covered, wrap it with plastic wrap.

Put it in the refrigerator for a while, take out and cut into pieces and you can eat it.
Tips:
1. The prepared pumpkin glutinous rice cake can be eaten directly, or dipped in xylitol to increase the sweetness. If you put a wooden stick in the middle of each pumpkin glutinous rice cake, put it in the refrigerator and freeze it for a while, and eat it as an ice cream, it's also delicious.
2. About the principle of sugar removal: The main ingredient of rice is starch, which is divided into two types: straight chain and branched chain. The amylose content is about 20%, the digestion speed is slow, and the blood sugar rise is slow after eating; the amylopectin content is about 70%, the digestion is fast, and the blood sugar rises quickly. Therefore, by controlling the intake of amylopectin, sugar can be effectively controlled. This "Zhenmi Desugar Rice Cooker" is to boil the rice to half-cooked, dissolve a part of the "pullulan" into the rice soup, then drain the rice soup, and further steam the rice under water. The glycemic index of the rice made in this way is about 35% lower than that of ordinary rice.
