Golden Garlic South American Prawns

Take out the frozen South American prawns and thaw.

3 salted duck egg yolks, pressed into puree.

Shred ginger, slice garlic, mince coriander, and dice red pepper.

After the shrimp are cleaned, go to the shrimp gun and shrimp line. (Here is a tip: You can remove the shrimp thread completely without opening the back. Counting from the head, at the junction of the second and third section, use a toothpick to cross the shrimp body to pick out the shrimp thread)

Put deep-fried shrimp in the pan, remove the fried shrimp and set aside.

Leave part of the fried shrimp oil in the pan, add garlic and ginger to the pan.

Add the salted egg yolk and stir-fry evenly over low heat.

Add the fried prawns and stir fry so that each prawn is coated with salted egg yolk.

Finally, add the diced chili and coriander, and season with a little salt.
Tips:
1. The shrimp thread should be cleaned up, otherwise it will affect the taste;
2. When frying salted egg yolks, be sure to have a low heat, so as not to burn them;
3. Stir-fry until the moisture is dry and each shrimp is covered with salted egg yolk.
