Goldfish Mantou
1.
Use warm water to dissolve the sugar and yeast, and pour the flour and milk powder into the bowl.
2.
Pour the yeast water into the basin and knead it into a smooth dough. Take out a small portion, add pumpkin powder and knead it into a yellow dough. After adding the fruit and vegetable powder, knead more. Just like washing clothes, knead for a few minutes to completely knead the fruit and vegetable powder into the flour. You can also just make it. One color saves time and effort.
3.
The dough does not need to be fermented, and it is directly shaped. Take a part of the yellow dough, pull out some parts, and press them in different positions of the white dough, so that a two-color dough can be made. Take 55 grams of dough and knead into long strips, cut out 11 portions, and knead each small portion into thin strips. The unprocessed dough must be covered with plastic wrap to prevent it from drying out.
4.
Fold in half as shown to make a fish tail.
5.
Then take 11 small pieces of 20 g dough and knead them into an oval shape to make the fish body. Don't over-knead the dough to prevent mixing two different colored doughs.
6.
Press the tail of the fish under the body, and use a clean comb to make patterns on the tail and body of the fish.
7.
Use scissors to cut out the fins.
8.
Use chopsticks to poke a small hole in front of the fish head to make a fish mouth. Use a little white dough to make a round shape to make fish eyes, and then paste black sesame seeds. Use a little white dough to knead into very thin noodles, make a small circle, and stick it on the mouth of the fish. If it is not sticky, you can stick a little bit of water and it will be very firm. If the dough is too small, you can use toothpicks to help.
9.
Put the prepared small fish on the steamer and let it rise in a warm place for about 20 minutes, depending on the fermentation state of the steamed bun embryo. Steam in a pot on cold water. After the water is boiled, turn to medium-low heat and steam for 13-15 minutes. When time is up, turn off the heat. Continue to simmer for 3-5 minutes before uncovering. The specific steaming time depends on the size of the steamed bun embryo.
