Griddle Cauliflower

The bacon is soaked in warm water for 15 minutes to remove surface impurities and then sliced. Cut the onion, ginger, garlic, dried red pepper and other auxiliary materials.

Tear the cauliflower by hand, and slice the root with a knife. Boil a pot of water, put an appropriate amount of salt and cooking oil in the water. After the water is boiled, add the cauliflower and boil it until it is dead. Remove it and ice it with ice water.

Put an appropriate amount of oil in the pan, saute the pepper and ginger slices, then remove them, add the green onions, garlic and dried red peppers to fry until fragrant, add the sliced bacon and stir fry.

Add cauliflower and stir-fry on high heat, add appropriate amount of light soy sauce and salt, and stir-fry until evenly, then turn off the heat.
Tips:
Blanch the cauliflower until half-cooked. Don't let it boil for too long. Salt and oil in the water can make cauliflower crisp and bright in color.
