Grilled Choy Sum with Shiitake Mushrooms

Pick off the old yellow leaves from the fresh choy sum, wash and set aside.

Soak the fresh shiitake mushrooms in water for five minutes to clean. If there is no time, don’t soak.

Boil water in a pot, drip a few drops of oil, add the choy sum, blanch the color, and put it out on a plate.

Put the shiitake mushrooms in the blanched water and cook for five minutes to remove.

Pour out the water, add vegetable oil and oyster sauce after the pot is heated, (turn down the heat) quickly, pour in the blanched mushrooms, stir fry a few times and turn off the heat.

Place the shiitake mushrooms on top of the vegetables and pour the juice from the pot on top of the vegetables.
Tips:
Don't blanch the choy sum for too long, it will affect the taste! The oyster sauce is enough to taste, adding a few drops of light soy sauce is just to improve the freshness, no need to add salt.
