Grilled Tofu with Morels

Soak the morel mushrooms in warm water to wash away the sand and set aside.

Wash the scallions, cut the scallions into white pieces, and chop the scallions into fine pieces.

The key step for frying the tender tofu: add water and a little salt to a boil, put the tender tofu in the blanching sauce and remove it for later use.

Pour the oil into the wok and turn to a low heat. Hold the tofu in your hand, cut it, and place it in the wok carefully. Put all into the pan and fry the tofu over medium-low heat. Fry one side and turn it over carefully until both sides are golden brown and served.

Leave a little base oil in the pot, add scallions and sauté fragrant, then add the fried tofu, soaked morel, pour in the water of the soaking fungus, add soy sauce or bean paste to season, turn to a low heat and simmer on high heat. Cook until the tofu is delicious.

Use chopsticks to pick out the scallion and discard. Sprinkle with chopped scallions after serving.
