There are two types of yellow croaker, "large yellow croaker" and "little yellow croaker". The large yellow croaker has thick flesh but is slightly rough and old, and the small yellow croaker is tender and fresh but with more spines. There are many ways to cook yellow croaker, most of which are sweet and sour here, but the home-cooked method is mainly stewed. It coincides with the weekend, making a big yellow croaker and stewing it with XO sauce and June fresh lemon steamed fish soy sauce is very delicious.

Grilled Yellow Croaker in Xo Sauce

1. First, wash the fish, prepare the onion, ginger, garlic and seasonings.

2. Pour a spoonful of peanut oil into the pot, add sliced ginger, minced garlic, chopped green onion, and peppercorns until fragrant.

3. Add 2 scoops of Verdame Fine Cooking Wine and heat.

4. Gently fry the yellow croaker in a pot and turn to medium heat.

5. The fish is topped with a layer of June fresh lemon steamed fish soy sauce.

6. After frying for a while, spread the xo sauce on the fish.

7. Add a small bowl of pure water and sprinkle with chopped green onions.

8. Cover the lid, turn to low heat, and simmer for 10 minutes.

9. Then gently slide the fish to the other side, sprinkle with chopped coriander, and continue to simmer for 3-5 minutes.

10. Turn off the heat, do not open the lid immediately, continue to simmer for 3 minutes, then open the lid and load the plate, the spicy yellow croaker is ready.

Tips:

During the stewing process, the fish will not turn around, you can leave it untouched. It is also good to stew it over a small fire.
