Handmade Egg Thin Noodles

Put the high-gluten flour in a deep basin, beat an egg, and stir with chopsticks.

Then slowly add water.

Stir it with chopsticks into a flocculent shape, then knead it into a dough (too dry) and prepare for pressing.

Before pressing, use a knife to cut the dough into several thick noodles.

Use the thickest gear to start pressing the surface, press back and forth several times, and then press the surface back and forth from thick to thin in sequence.

Before preparing the noodles, adjust the gear to 3 gears. This gear is moderately thick and thin. Press the noodles back and forth three or two times. The pressed noodles are very smooth and not sticky.

Spread a layer of hand flour (high-gluten flour) on the front and back of the noodles before taking out the noodles. If the noodles are too long, they can be cut with scissors.

Boil a pot of hot water, add the noodles after the water boils, and cook (boiling noodles is so simple, everyone knows it, I won't say more).

Scoop up the cooked noodles, add noodle sauce or black pepper sauce (according to personal preference), and mix well.

Finally put some side dishes: I fried ham sausage, boiled salted quail eggs, bought a pack of cold seaweed, enjoy it deliciously!
