Chop the trotters into small pieces, boil the water and remove them, wash the blood foam and drain the water for later use. If it is cooked after soaking in ice water, the trotters will not be easily boiled, and the taste will be better. In addition, the pig's trotters should be medium-sized. If they are too big, there will be too much fat. If they are too small, only the skin will be left. Only the medium-sized ones will have a moderately fat and skinny texture.

Turn the heat to a low heat and simmer for 40-60 minutes, using chopsticks that can easily pierce the trotters. The tangerine peel has the effect of degassing and removing greasiness, but it will have a bitter taste after cooking for too long. Therefore, remove the tangerine peel after simmering for 25 minutes and discard it, which can remove the greasiness and retain the fragrance of the tangerine peel.
