Happy New Year Cake Roll

Prepare the ingredients, separate the egg whites and yolks (take 4 egg whites and 3 egg yolks)

Add 35g of fine sugar to the egg yolk and beat with a whisk until foaming

Then add water, salad oil, and lemon juice in turn and stir well

Sift low-gluten flour and cornstarch into the egg yolk paste

Use a whisk to mix into a uniform batter

Add 30g of granulated sugar to the egg whites in two times and beat them until they are foamed

Lift the whisk to show a sharp corner

Take one-third of the beaten egg whites, put them in the egg yolk paste and mix evenly

Pour the mixed batter back into the remaining two-thirds of the egg whites

Continue to mix into a fine paste

Take part of the batter and add a drop of red pigment and mix well

Put it in a piping bag, cut a small cut at the sharp corners, draw a checkered pattern on a baking sheet covered with greased paper, and put it in a preheated 170 degree oven for 1.5 minutes and take it out

Pour the original batter into a baking pan with a pattern, and use a scraper to smooth the surface of the cake batter

Pick up the baking tray, tap the bottom with the other hand to shoot out large bubbles, put it into the preheated 170° oven, heat up and down, and bake for about 15 minutes

The baked cake slices are immediately buckled upside down on the drying rack to prevent shrinking, tear off the greased paper while it is hot, and then cover it back

When it has cooled and no temperature, put a piece of clean greased paper upside down, peel off the edges of the cake, and make a shallow knife mark at 2cm.

Whipped animal whipped cream with fine granulated sugar and icing to form a cream frost. Use a spatula to wipe on the cake body. Cut the strawberries into small pieces and place them on top

Slowly roll it up, wrap it in oil paper and put it in the refrigerator for 1 hour to set

Add a little hot water to the cocoa powder to boil, use a toothpick to write Happy New Year on the cake roll and it’s done.
