Healthy Mushroom Chicken Soup

1. To prepare mushrooms, I bought the platter directly.

2. Wash, break into pieces, and slice shiitake and eryngii mushrooms. Soak in water for a while.

3. Cut green onion into sections, slice ginger, and chop coriander.

4. Put the drumsticks in a pot of boiling water and blanch them for 5 minutes. If you like meat, you can put more old hen chicken. I mainly drink mushroom soup.

5. Put enough water in a casserole pot, add green onions, ginger, star anise, wolfberry, lute leg, boil and simmer for 1 hour until the chicken legs are tender.

6. Add all the mushrooms and continue to simmer for another 10 minutes.

7. Add chives, coriander, salt, chicken essence and sesame oil before boiling.

8. You can save the rest of the soup for hot pot or noodle soup!
