Hericium and Lotus Root Bone Soup

Prepare the Hericium erinaceus for soaking;

Soak it in the rice washing water that has submerged the Hericium for 2 hours. The Hericium will float. You can press a heavy object in the bowl so that the Hericium can absorb enough water;

The soaked Hericium edodes has become soft. Check with your hands to see if there is any dryness. If there is any, you can continue to soak for a while. If not, dig out the hard core of the Hericium edodes;

Wash the Hericium erinaceus with clean water (warm water) repeatedly. At this time, you will see that the water turns yellow. Pour it out and re-squeeze and scrub with clean water. Repeat three to four times until the yellow color fades away;

Take a thick broth, put it in a large bowl, pour in an appropriate amount of boiling water, and make the broth base;

Put the Hericium erinaceus in a large bowl, steam it in a steamer for more than 30 minutes, boil it with water, and calculate the time. The non-bitter Hericium edodes was successfully soaked.

When the Hericium edodes is steamed in the pot, prepare other ingredients for the soup;

Boil the pork bones in the pot for later use;

Peel and cut carrots;

Peel the lotus root and cut into pieces, soak in vinegar-added water to prevent discoloration;

Remove the blanched pig bones and put them in a soup pot, and put carrots;

Add lotus root and ginger slices;

Pour the monkey mushrooms and soup into the soup pot, bring to a high heat and turn to the minimum heat for 90 minutes;
14.
Finished product.
Tips:
1. The lotus root is soaked in water with vinegar to prevent it from turning black, and the color of the soup will not turn red;
2. It takes a long time to soak the Hericium erinaceus, so it can be soaked more at a time and eaten several times.
