Hericium and Pork Belly Soup

Soak the lotus seeds in advance. If they are cored, use a toothpick to remove the lotus cores, otherwise the stewed soup will be bitter. The lotus core reduces the fire, and this soup is to nourish the stomach, so it is not allowed to bring the lotus core. I choose the Hericium erinaceus without washing and foaming, which is more convenient

Let's clean the pork belly first, the pork belly just bought is covered with mucus. First rinse off the debris on both sides with running water, then pour some white vinegar and rub it, then wash it off. Add flour and continue scrubbing. Flush. The pork belly is very refreshing after two passes.

Boil a pot of hot water and put a plate into the pork belly. Support the pork belly. Blanch for about 3 minutes. The set of plates is to prevent the pork belly from receding severely during blanching.

After blanching the pork belly, use a knife to scrape the dead skin and dead calluses and fat on both sides. Continue to rinse off with warm water. The soup produced in this way will not be greasy.

Stuff the Hericium erinaceus into the pork belly. Put it in a saucepan and add enough hot water. A small piece of ginger. Bring to a boil and cook for about half an hour. Turn to low heat and cook slowly. The total duration is about 2 hours.

This is when the soup is simmered for about 1 and a half hours, the soup has turned white.

Take out the pork belly and cut it into strips with a knife or kitchen scissors. Put it in the saucepan and continue to simmer.

At the same time, pour the washed lotus seeds together. Continue to cook for about half an hour. Finally, add the right amount of salt according to your personal taste. You can also add some if you like pepper. This soup is very delicious, no need to add chicken
Tips:
Wash the pork belly a little bit so that the soup will not be fishy. Stew the whole pork belly and cut it into pieces at the end to prevent the stewed pork belly from curling and becoming hard. The taste is more tender and smooth.
