Hericium Mushroom Chicken Pot

Prepare all ingredients.

Wash the native chicken, and pluck the remaining hair from the chicken body with tweezers.

The quick-frozen Hericium edodes is thawed.

Fill the pot with water, add the chicken, boil the water, and cook for 2 minutes to remove and drain the water.

Wash the ginger, cut into pieces and place on the bottom of the casserole.

Put the blanched chicken in a casserole and add an appropriate amount of water.

Heat it on medium heat, and use a spoon to clean the blood foam while heating.

Cover the lid, turn to low heat, and boil for 1 hour and 30 minutes.
9.
Add Hericium erinaceus. Continue to boil for 1 hour.

Pour out the soup and stir evenly with some salt before serving.
Tips:
Add enough water at one time, and it is best not to add water in the middle. The blood foam must be cleaned up, so that the soup will be milky and not smelly. If you use dried Hericium edodes, do not soak in advance.
