Put an appropriate amount of oil in the pan, add the pork belly and fry slowly on low heat until the meat changes color and the excess fat is deposited.

Pick up the meat, add some oil, first add the pepper and star anise and fry slowly. After the aroma is released, add the green onions and fry slowly, similar to deep-fried shallot oil.

Pour in the pork belly, then minced ginger and garlic, put an appropriate amount of cooking wine, and stir.

Pour in the mixed sauce and continue to mix for a few minutes.

Pour in pleurotus eryngii and dried tofu, and put a small amount of dark soy sauce.

Turn the heat down a little bit, and stir it with a spatula from time to time to prevent it from sticking. It's about 20 minutes of frying.

1. The pork belly is not peeled. After frying, it feels good. If you don't like it, you can remove the skin.
2. Because it is to make deep-fried sauce, the oil is put a lot, and finally some water will come out of the Pleurotus eryngii, so there is no drop of water.
