Then, prepare cucumber, tomato, coriander, spicy cabbage, sausage (I used Laochang’s children’s intestines with pine nuts in it), iced mineral water (cold noodle soup is delicious), cold noodle seasoning bag, and juice And fruit vinegar.

Tomato slices (I cut the tomatoes on the front side, so that the cut tomatoes have tomato petals), diced parsley, boiled eggs, peeled and cut in half, and cut the cucumber into silk (the cucumber should be inserted in one direction, not back and forth)

This is a dry ingredient for cold noodles, with chili in it but not spicy. This kind is sold in the market or supermarket or dry material store.

Lao Juice (mainly use it to pick cold noodle soup). Here is a trick: Pour the apple cider vinegar into the juicing bottle and shake it well. This cold noodle soup will be seasoned with it.

Boil the water, the water must be boiled, not cold under the pot.

Put in the cold noodles, because it has been soaked, so cook it for 1-3 minutes. After cooking, immediately remove it and let it cool.

Put the cold noodles in a bowl.

Put the side dishes on top of the cold noodles, tomato slices, cucumber slices, sausage slices, spicy cabbage, and eggs. And pour the prepared fruit vinegar on the cold noodles.

Because I like spicy food, I fried chili oil. In a clean bowl with no water, put chili noodles, cumin, pepper (you can also replace it with sesame pepper), bay leaves (you can leave it out), salt, and sesame (you don’t have it at home, so I didn’t put it this time) ).

Boil the hot oil in a pot and stir while pouring it to prevent it from becoming mushy. Then the chili oil is ready!

If you like spicy, you can add chili oil to the cold noodles.
Tips:
Cold noodle soup = Lao Juice + Apple Cider Vinegar + Mineral Water + Cold Noodle Dry Ingredients for seasoning. Just use Lao Juice for seasoning (Lao Juice and Fruit Vinegar should be mixed together). The side dishes can be changed according to personal taste! Soak cold noodles in advance, best! But no more than one day at most.
