First, clean up the fish you bought for later use.

Slice pickled sauerkraut, pickled ginger and ginger, just cut the garlic, and cut the green onion into long sections. Put pickled sauerkraut, pickled ginger, garlic, pepper, watercress, and ginger slices in a bowl for later use.

Heat up the pot and pour some vegetable oil into it. When the oil is hot, pour the seasonings in the bowl and fry until fragrant. Then stir-fry the fish. At the same time add rice wine and dark soy sauce. Simmer for about 30 minutes. Add sugar, vinegar and scallions before serving. When the green onions change color, they will be served on a plate.
Tips:
1. I cook frozen sea fish, which takes a long time, so you have to control the cooking time for other fish.
2. White sugar and vinegar are also optional.
