Homemade Braised Pork

The spoon I use is such a big 🙄. In fact, cooking more times is to add ingredients based on feeling, the so-called right amount 😉.

Shave and wash the pork belly, prepare ginger, garlic, star anise, etc.

Cut the pork belly into pieces, smaller in size than Mahjong, just flatten with garlic, and slice ginger.

Put water in the pot to boil, put the cut pork belly in the pot, blanch it, remove it and rinse it twice with warm water.

Wash and dry the pot, add about two spoons of oil, heat it on a low heat, add a spoonful of white sugar, keep turning until it turns yellow, bubbling, and smoke, then add ginger, garlic, cinnamon, etc. to fragrant, then add and stir. Stir-fried pork belly to color.

Pour in boiling water, the amount of water should be less than that of the meat, add 2 spoons of soy sauce, 2 spoons of rice wine, salt, turn on medium heat, cover the pot, cook for 20-25 minutes, and turn on high heat for the last few minutes to collect the juice.

Tips:
1. I cook in my hometown and use an induction cooker. The heat control may not be the same as that of the gas, so you may need to add more water to the gas.
2. Be careful when turning white sugar, don't burn it, it will be dark and not slippery, you can only pour it over again.
