Homemade Chili Oil

Chili crushed, cooked peanuts, cooked white sesame seeds (If you don’t have crushed chili, you can grind it with dried chili. You can grind it into chili noodles according to your own preferences. I have cooked peanuts and sesame seeds. If you don’t have them cooked, You can buy raw ones and fry them yourself).

Ingredients: a few peppers, 1 star anise, 2 bay leaves, 1 chive (or a small piece of green onion), 2 small slices of ginger, 2 cloves of garlic, a little salt, a little chicken essence, a little vegetable oil, and a proper amount of water.

Add some water and salt to the crushed chili and mix well. The amount of water does not need to be too much, as long as it can mix with the crushed chili. Adding some water will help the capsaicin in the chili to ooze out, and it is not easy to fry the chili, and the color of the oil is also clear.

The peanuts are packed in a bag and crushed with a rolling pin. I didn't use the grinder. The main reason was that the amount was too small, so the rolling pin can be done first, and the second is to save cleaning.

Pour vegetable oil or salad oil into the pot. When it is 4-5 hot, change the heat to a low heat. Put in pepper, star anise, and bay leaves and fry for 2-3 minutes, then remove.

After removing the pepper, star anise, and bay leaves, add the shallots, garlic, and ginger slices and fry for 2-3 minutes, then remove them all over low heat.

Add white sesame seeds and chopped peanuts, fry for 2-3 minutes, then pour in chopped chili.

Low heat, simmer slowly until the water in the crushed chili evaporates.
