Homemade Cream

After the corn oil is heated, pour it into a dry bowl and let it cool for later use.

Pour the water into the pot, add the fudge (I used the southern coconut fudge, which will not mess up the cream flavor), and slowly heat it over a low heat until the fudge dissolves in the water.

After the sugar water is boiled, turn off the heat, add the milk powder, stir evenly, filter out the undissolved soft candy and milk powder particles, and pour it into a bowl for later use.

Beat the egg yolks with a whisk until the color becomes lighter, sift in the flour and starch, then add the toffee water (it may solidify slightly into a pudding shape, it does not matter), stir it slightly and then beat with a whisk until there are no particles.

Boil hot water on a small fire and heat the batter over water. In order to prevent the starch from clumping, stir constantly. Use a spoon or spatula to stir. Don't use chopsticks (I only discovered later), otherwise the stirring speed will not keep up with the speed at which the starch solidifies on the bottom of the basin. . Just heat it to a non-flowing paste. (It doesn’t matter if you have a pimple, just hit it with a whisk later.)

Beat the batter a little, and the lumps inside will open. This works, but it will be more fluffy and smooth with a little oil.

Add the cooked corn oil to the batter four times, and keep beating.

The final batter is lighter in color, slightly larger in volume, and has clear textures. It does not melt or solidify. It can be decorated, but it is heavy. If the surface is applied, the chiffon cake will collapse.

The decorating mouth and decorating stick have fallen in someone's house...I surrounded one with tin foil.
