Homemade Fried Noodles
1.
1. Peel and dice pork belly to ensure that the meat is fat and lean, and the size of the diced fingernails.
2.
2. Hot pot with sesame oil, stir the pork belly to get the oil, if you are afraid of fat, you can stir it for a while
3.
3. Liubiju’s dry yellow sauce and sweet noodle sauce are hydrated, and the noodle sauce and yellow sauce are 1:1 (the yellow sauce is concentrated and will be more hydrated; the noodle sauce is sweeter, which helps the taste).
4.
4. Mince scallion and ginger
5.
5. Temporarily remove the pork belly, sauté the chopped green onion and ginger until fragrant, add the sauce and "fry" with oil.
6.
6. Add rice wine, water, sugar, chicken essence, and a little oil (the sauce is enough to taste, so there should be no need to add salt) to boil, add pork belly, keep stirring, simmer on low heat, be careful not to stick to the bottom of the pot
7.
7. When the water is almost harvested (bubble), you can turn off the heat. At this time, the sauce is rich and can hang on the shovel.
8.
8. Cut cucumber into shreds, and can also be used with mung bean sprouts, water radish, and carrot shreds.
9.
9. The noodles must be cooked in cold water! Then mix with cucumber and fried sauce, and finally add minced garlic (or the whole head haha). A big bowl of fragrant fried noodles is just fine!
Tips:
a. When choosing meat, try to choose pork belly, fat and lean to make meat sauce after it is very fragrant, if you replace it with minced meat, the taste will be much less!
b. The sweet noodle sauce already has a sweet taste, but I am used to adding more sugar, if you don't like sweeter ones, you can omit it.
c. The noodles tend to stick if they are not cold water, but they also have a different flavor.
d. Liubiju dry yellow sauce must be needed, the taste is better than ordinary bean paste, and because it is concentrated, one pack can make a big pot.
Such a large bowl of fried noodles is ready, meat sauce can not only be noodles, but also burritos. Bibimbap is not recommended because it feels very strange. . .
Pair it with a bottle of Yanjing! Dream back to Beijing!
