Homemade Hot and Sour Noodles

Prepare ingredients. Appropriate amount of sweet potato vermicelli, a packet of broken rice sprouts, a few rapeseed, appropriate amount of coriander, appropriate amount of peanuts, and soybeans.

After soaking the soybeans in water for an hour, drain the water. Then put it in a wok and stir-fry until ripe.

Peanuts are peeled and then fried in a pan until ripe. After letting cool, press into peanuts and set aside.

Put the sweet potato vermicelli in a basin, then pour an appropriate amount of boiling water, soak for 30 minutes and set aside.

Take an empty bowl to make hot and sour foundation. First, add 2 tablespoons of chili oil, 4 tablespoons of aged vinegar, 2 tablespoons of light soy sauce, and half a tablespoon of chicken essence, then stir well and set aside.

Pour the right amount of cooking oil into the pot, add 1 spoon of Pixian bean paste when the oil is hot, and stir-fry to get the red oil.

Put the right amount of water and salt in the pot and bring it to a boil.

Put the sweet potato flour in the pot and cook for 2 to 3 minutes.

Put the rapeseed in the pot, cook for 30 seconds, then turn off the heat.

First, scoop a spoonful of hot noodle soup in a bowl with hot and sour foundation ingredients, and then add noodles and rapeseed to the bowl. Sprinkle some broken rice sprouts, chopped peanuts, soybeans, and chopped coriander, and then drizzle a little sesame oil to serve.

1. Sweet potato vermicelli is best for making hot and sour noodles.
2. Broken rice sprouts can be bought in supermarkets.
3. The soup of hot and sour noodles should be stock, but the preparation of stock is complicated, so you can also use water.
