Homemade Hu Spicy Soup

A moderate amount of flour. I made the amount for three people and used a bowl of flour.

Put an appropriate amount of warm water, and stir the noodles while adding water.

Knead the noodles to resemble dumpling noodles. Too soft.

Cover the noodles with a cage cloth and wake up for two hours (I knead the dough before going to work in the morning and make it when I get home at noon). Prepare a larger basin and an empty bowl.

Pour a bowl of water into the dough and grab it with your hands. The water gradually turns white. After mixing, pour it into a large basin.

Scratch the noodles many times and pour out the flour and water many times. Key point: The noodles are constantly blending into the water, so pour out the water. Continue to pour in water and knead again.

I changed the water about seven times.

Finally, knead a small ball of gluten and another pot of noodles.

Then add black fungus (need to soak), soy sauce. You can also add kelp thread (need to soak hair) according to personal preference.

Use a wok. Add oil, chopped green onion, eggs, and tomatoes in sequence. Then pull the whole piece of gluten into small pieces and put it in the wok.

After the vegetables are fried, slowly pour the noodle water into the pot.

Change to medium heat and stir constantly with a spatula to prevent sticking to the pan.

Out of the pot. According to personal taste preference, add appropriate amount of vinegar and pepper. The amount of three bowls is just right.

This amount is not too rigorous, so just grasp it yourself.
