Homemade Mooncake Filling-lotus Paste Filling

Wash the lotus seeds well and soak them softly.

Remove the lotus heart after fully soaking it softly.

Put it in a pot, add an appropriate amount of water and cook thoroughly.

After it's cooked through, let it cool down and beat it with a food processor.

Add about 20 grams of oil to the pot, add lotus seed puree and sugar, and stir fry. After each addition of oil, stir-fry the lotus mud and add the second oil.

Stir-fry until it is dry and hard.
Tips:
1. You can also pack it in a fresh-keeping bag and press it with a rolling pin.
2. Don't use too much oil, and it can be moderate according to personal taste.
3. It can be out of the pan by frying, or it will leak oil when it is heated in the pan.
