Homemade Noodles

Prepare 250 grams of naked flour and boil a small pot of boiling water. After the water boils, pour water into the noodles with one hand, and stir the flour with chopsticks in the other until the flour has no dry particles. (Usually I just look at the condition of the flour. This time I weighed the amount of water, and the amount of water is 262 grams. For your reference)

When it is not too hot, knead it into a smooth dough while it is hot.

Knead into large thick strips, do not need to sprinkle flour on the panel, because the noodles are not sticky.

Cut into 8 doses, put the doses in a basin and cover to prevent dry skin.

Roll out into a circle, about 2 mm thick, as thin as possible.

Put a steamer on the wok and steam on high heat for 3 minutes. You can also steam it for a minute or two before putting one on top. No need to grease the middle. Because the noodles are not sticky, but put up to three sheets. Peel after it is cooked (this kind of multi-layer steaming, the noodles should not be blanched and soft).

A total of 8 pieces of 250g noodles were steamed. Keep in the refrigerator after cooling. When eating, just steam it in a pot and let it soften. You don't need to soften it if you fry it.

When cutting the noodles, apply some oil on both sides of the knife to prevent sticking.

Cut some shredded cucumbers and add them to the bowl of noodles.

Two large cloves of garlic, mashed with salt, immersed in boiling water (about 15 grams) of about 70 degrees to boil the garlic (the garlic is more spicy), then add two tablespoons of pepper aniseed water and one tablespoon of old vinegar Melt a spoonful of sesame paste, then add spicy pepper and a little sugar. You can also add a little sesame oil. Taste the taste of the soup and adjust it according to your own taste.

Tips:
If you rely on grandma to make noodles, the noodles should be a little harder.
