Homemade Pickled Cucumbers

Wash the cucumbers and control the water.

Wash the green peppers and cut them with a knife to taste. Cut the ginger into large slices. Put the sliced cucumber, green pepper, and ginger into a small pot.

Pour soy sauce into the pot, add star anise and cinnamon, and bring to a boil over high heat.

Wait until the boiled soy sauce cools down and pour it into a small pot of cucumbers and peppers.

Set up another oil pan, add the peppercorns to heat.

Pour the burnt pepper oil into a basin with cucumbers and pickle it for 24 hours before eating.
Tips:
1. Control the raw water when washing cucumbers and green peppers.
2. The soy sauce can be boiled into a small amount of water, which can reduce the salinity.
3. If the cucumber is big, it can be cut into slices and then cut into long sections for easy taste.
