Homemade Three Cup Chicken

Prepare ingredients, chicken thighs, rice wine, green onion, ginger, garlic, soy sauce, etc.

Cut the chicken thighs into pieces, wash and add salt, oil, and soy sauce to marinate for ten minutes (you can add some ginger when marinating). While marinating, cut the ginger into shredded ginger or minced ginger, peel the garlic and set aside.

Heat the pan until it smokes, add sesame oil, and when the sesame oil is 80% hot, add some onion, ginger, garlic and stir fry, then add the marinated chicken and stir fry.

When the chicken is fry until tight and slightly golden brown, add a tablespoon of rice wine, boil it on high heat, then turn to low heat and simmer for ten minutes.

After simmering, add light soy sauce and dark soy sauce and stir fry for a few minutes, then transfer to a pot and cook for 20 minutes.

Finally, add the nine-story tower when it comes out of the pot and serve it on the plate.
Tips:
1. The chicken should be washed, or blanched in water before cooking, so that it is not so fishy;
2. Three cups of chicken are a cup of sesame oil, a cup of wine, and a cup of soy sauce.
