Homemade Tofu

Cut the tofu into small pieces.

Wash the fungus and drain.

Chop green onion, ginger, and garlic, and cut green and red peppers into pieces.

The garlic sprouts are slapped flat and cut into oblique sections.

Pour an appropriate amount of oil into the pan, add tofu and fry until golden on both sides and remove.

Leave the oil in the bottom of the pot, add green onion, ginger, and minced garlic to fry until fragrant.

Add the chopped Pixian bean paste and stir-fry to get the red oil.

Add tofu and stir-fry evenly, add cooking wine, light soy sauce, and a small bowl of water to boil.

Add the fungus, cover and simmer for about 3 minutes.

Add sugar to taste, pour in green and red peppers and stir-fry evenly.

Add the garlic sprouts and stir fry for a fragrance.

Pour in a little water, starch and thicken the gorgon, and finally add a few drops of cooked oil and stir well.

Tips:
Soybean paste and light soy sauce are enough salt, no need to add additional salt. Add heavy flavors as appropriate. Don't cut the tofu too thinly, as it will dry and taste bad after frying.
