Hoof Jelly

Use tweezers to clean the pig's trotter and the remaining pig hair

Boil the bleeding impurities in a pot of boiling water and rinse off

After the inspection is completely clean, put it into the electric pressure cooker, pour some cooking wine, put some ginger, and a stew spice bag, add water and trotters parallel

Press for an hour to naturally exhaust, remove the trotters to pick out the bones, then pour the meat back into the pot again, add a little salt, and press for another hour

After pressing, skim off the top layer of oil, otherwise it will be greasy when you eat

Pour the pig's trotters soup into a suitable basin and put it in the refrigerator to set the shape and it will be frozen.

Dip it in the seasoning sauce, I only used the three seasonings I made, chili oil, soy sauce, and cold vinegar.
Tips:
Make sure to skim off the oil on the stewed hoof soup so that it won’t be greasy when you eat it.
