Hot and Sour Cold Noodles
1.
Fresh soda noodles, mung bean sprouts, garlic, and cucumbers from the supermarket.
2.
The peeled peanuts fried by yourself.
3.
Shred the cucumber.
4.
Boil water in a pot, boil the water and add the soda noodles to blanch for a minute and quickly remove them.
5.
Put a little sesame oil into a bowl and stir evenly. Shake to dissipate heat and cool naturally. You can also use cold water. Personally, I don’t like cold water.
6.
After removing the noodles, add mung bean sprouts and blanch them.
7.
Take out the cold water after two minutes.
8.
Add a spoonful of salt, a spoonful of sugar, a spoonful of oyster sauce, a spoonful of Nande ingredients, two spoons of white rice vinegar, three spoons of light soy sauce, one spoon of sesame paste, three spoons of cold boiled water, stir well and set aside.
9.
Mashed garlic to make garlic juice.
10.
Add side dishes to the noodles.
11.
Pour in the adjusted sauce, pour in an appropriate amount of garlic juice and stir evenly.
12.
Add homemade chili oil and stir well.
13.
Sprinkle a little white sesame on the plate.
Tips:
Just blanch the soda noodles a little bit, and the noodles will not be chewy after cooking for too long.
