Hot and Sour Cucumber

Prepare two cucumbers and wash the surface; friends who don’t like to eat the skin can also peel off the cucumber skin

Place the chopsticks on both sides of the cucumber; slice at a 45 degree angle with a diagonal knife [the purpose of the chopsticks is to prevent the cucumber from cutting to the end] Cut the whole root and set aside

Then reverse the cucumber and cut it straight (as shown above) and cut to the end. Cut well and set aside

Carefully pull apart the cut cucumber (pictured)

Then put the cucumber rolls in a bowl and sprinkle an appropriate amount of fine salt. Marinating for about half an hour will make the cucumbers more crispy

Two spoons of white vinegar and mature vinegar (according to your taste), one spoon each for sauce and sugar

1 spoon each of garlic, dried chili, and secret sauce, appropriate amount of chicken essence

Then pour the just adjusted sauce on the marinated cucumber; add an appropriate amount of chili oil (according to your own taste) and pour it on the cucumber

Put it in the refrigerator for an hour to taste better
