Hot and Sour Lotus Root.

Peel the lotus root, wash and dice, and soak in water.

Wash the green pepper and cut into small pieces.

Cut green onions, chopped ginger into thin strips, cut dried chili into small pieces, and set aside the pepper.

Heat the oil in the wok and fry the peppercorns on a low fire until fragrant.

Saute the chopped green onion, shredded ginger, and dried chili.

Pour in the lotus root and stir-fry for a while, and it will be very delicious.

Add a small amount of water in the middle.

Pour the green pepper and stir well.
9.
Season with salt and vinegar.
Tips:
When the lotus root cannot be fried immediately after cutting it, soak it in water to prevent it from turning black.
