Hot and Sour Lotus Root

Prepare ingredients.

Dice lotus root.

Chop millet peppers and chop green onions.

Take a small bowl and add 1 tablespoon of light soy sauce, 2 tablespoons of balsamic vinegar, 1 tablespoon of sugar, and a pinch of salt to make a juice.

Bring water to a boil, add lotus roots and blanch for 2 minutes, then remove.

Rinse twice with cold water.
