Hot and Sour Lotus Root

Peel the lotus root, wash, cut into silk, rinse with cold water, and remove.

Cut the dried red pepper diagonally into shreds, and prepare about 10 peppercorns.

Heat the wok, pour a little oil, add dried red pepper shreds and Chinese pepper to choke the fragrance.

Add lotus root and stir fry.

When the lotus root starts to become transparent, add an appropriate amount of white vinegar and stir fry.

Tips:
After the lotus root is cut, rinse it with cold water to wash off some starch and it will not stick to the pot easily.
It is best to use tender lotus root tips, which are crispy when they are fried.
