Hot and Sour Potato Chips

Peel the potatoes and cut into slices.

Soak the cut potato chips in the clean water prepared in advance and rinse. Generally, rinse three times to remove the starch in the potato chips, and wait until the water is clear.

Cut green chilies into short lengths.

Add a proper amount of oil to the pot, add the onion, ginger, garlic, saute and add the green chilies and dried red chilies.

Tips:
After the potato slices are put in water, add a few drops of vinegar to the water, so that the fried potato slices will be more crisp.
