Hot and Sour Rouge Lotus Root Slices

1. Wash half of the purple cabbage, cut into shreds, soak in about 300ml of cold water for a while, stir and stir, pour out the water for soaking the purple cabbage, and stir evenly with white vinegar or lemon juice according to your taste.

2. Peel the lotus root, wash, slice, and rinse with water.

3. Pickled peppers and pickled ginger are cut into circles and sliced.

4. Bring water to a boil in the wok, add the lotus root slices and cook, remove, and drain the water.

5. Put the dried lotus root slices into a container, add pickled peppers, ginger slices, salt, sugar and the purple cabbage water adjusted in step 1, stir well and soak for about 10 minutes before eating.

Tips:

If you want a darker color, you can shred the purple cabbage, add water to make a juice, and use after filtering.
