This small piece of cake (palm-sized) daughter (three and a half years old) just finished one by herself!

Hot Noodle Scallion Pancake

1. Chopped green onions

2. Hot noodles: Take 350g of flour and add some hot water to prepare hot noodles. Hot water ratio: boiling water 190ml + cold water 125ml. Take a food bag, add a little cooking oil, make the dough and put it in the food bag to proof for at least 30 minutes, set aside

3. Shortbread: Take the remaining 70g of flour, add 5 teaspoons of cooking oil, 1 teaspoon of salt, pepper, five spice powder (if you like lard, you can use lard instead, and other spices can also be added according to personal preference)

4. Put a little oil on the panel, take out the proofed dough and straighten it into a long strip without kneading the dough again.

5. Evenly divide into 8 equal parts

6. Push it away with a rolling pin, spread the shortbread, sprinkle with chopped green onion

7. Rolled into strips

8. Roll to the middle from the left and right sides respectively

9. The small roll serves as the base, and the large roll is placed on it and pressed by hand. Take a food bag and cut one side (it becomes an L-shaped opening). Set aside for proofing.

10. Make all the pancakes in turn

11. According to the order of the biscuits, roll them out to the thickness you like one by one, and roll them through the plastic bag without taking them out.

12. After finishing all the pie crust, you can choose to put it in the refrigerator and freeze it directly. You don’t need to thaw it when you eat it, just put it in the pan and fry

13. Add a little oil to the pan and fry on low heat until golden on both sides
