Pixian Doubanjiang (There are many manufacturers of Pixian Doubanjiang, some are delicious and some are not good. This color is good-looking, but the taste is different from the simple one).

Cut the tofu into thin slices about 2 cm in size and 1 cm in thickness. Originally I wanted to make other flavors, but I changed it temporarily, otherwise I would make rectangular ones that look better.

Wash the green garlic and cut into cubes. Cut the green onion, ginger, and garlic into slices for later use.

Heat the wok with cold oil. When the wok is hot, add the peppercorns and fry them until fragrant. Remove the peppercorns and fry them with tofu.

Once it's fried, turn it over and cook it.

Wait until both sides are golden brown.

Add green onion, ginger and garlic and saute until fragrant.

Use a shovel to push the tofu to the side, put the Pixian bean paste in the middle and fry it until fragrant.

Then stir fry to make it evenly colored.

Then add green garlic, add a little cooking wine, light soy sauce, dark soy sauce, and add a little chicken broth or water.

Then add sugar, pour in vinegar, and thicken with water starch.
Tips:
1. The Pixian bean paste is very salty, and the taste of light soy sauce and dark soy sauce is enough. But if you put more bean paste, you should put less soy sauce, otherwise it will be salty.
2. If you want to eat extra spicy, you can put some dried chili sauce.
