Improved Okonomiyaki

Shred cabbage, add two tablespoons of salt, cover and store in the refrigerator overnight.

Potatoes in a pot under cold water, boil on high heat for 15 minutes, take out and pour with cold water, you can peel off large pieces of potato skin. Then cut it into half-finger-wide slices.

Tips:
1. The reason why the cabbage was pickled with salt the night before is because it can force out the moisture in the vegetable and it will not become soft when frying.
2. You can choose fish balls according to your own hobbies. If you are afraid that they will not be cooked well, you can cook them in advance.
3. Okonomiyaki is easy to disperse. If you are waiting for customers, you can cut the fish balls into smaller pieces to keep the shape easier. If you eat it by yourself, you can cut it up and enjoy the feeling of feasting.
4. The starch is poured in water to fix the shape of the okonomiyaki, otherwise it will easily fall apart.
5. Eating Okonomiyaki alone is easy to get greasy, so you can pair it with some wasabi.
