Tips:
1. If you use rice to cook porridge, soak it in water in advance. After washing it, soak for 30 minutes. The rice will absorb the water to make a soft and thick porridge.
2. Add proper amount of water. The ratio of rice to water is: whole porridge = 1 cup of rice + 8 cups of water. Thick porridge = 1 cup of rice + 10 cups of water. Congee = 1 cup of rice + 13 cups of water.
3. The rice should be potted under cold water, so that the rice can fully absorb the water, so that the porridge will be more fragrant and soft.
4. To master the heat, use a high heat to boil first, then quickly turn to a low heat, be careful not to overflow the porridge, then slowly cover the lid to leave a seam, and cook with a low heat.
5. Rock sugar can be boiled and then put on the porridge, or eaten after it is melted.
