In my impression, this is an ordinary and special biscuit, ordinary because it can be seen everywhere in Italy, especially because of its unusual way of eating. Compared to those sweets that are often so greasy and outrageous to see in foreign countries, this biscuit should be the most refreshing and refined one without adding any grease.

In Italian, the name of this biscuit is Biscotti, among which Bis means once and twice, so it is not difficult to guess that to make this biscuit, you need to bake it twice. Does it sound a bit cumbersome, but in fact it is too simple to do, no need to pass, and no status requirements, just follow the steps and mix it up.

Due to the second baking, the water content of this biscuit is extremely low and the taste is very hard. If eaten directly, the dry and hard taste is not pleasing at all, but if it is dipped with a drink, it is very different. The super water absorption will make it absorb enough juice, showing the best hardness and taste.

While waiting for the biscuits to bake, I also made a can of lemon honey. I soaked it in water every morning. It can be regarded as my family’s standing drink, refreshing.

Tips:

1. Use the almond slices after roasting to fragrant, which will enhance the fragrant biscuits;
2. The second baking can make the biscuits lose moisture and become harder and crisper;
3. Remember to dip in coffee when eating.
